CULINARY TEAM

UNDERGROUND GOOD FOOD MOOD. The itinerant project by Simone Cipriani and Matteo Ercoli creates a bridge between producers and consumers, aiming to spread awareness and sustainability in the world of food. We all know the meaning of the word “underground” as an artistic and social movement that emerged in the 1960s, challenging mainstream culture by experimenting, innovating, reinventing, and breaking away from what was considered common and normal. This is precisely the spirit behind Underground, the itinerant spin-off by chef Simone Cipriani and his partner Matteo Ercoli. Launched in the spring of 2023, this project serves as a connector between companies and end consumers, with the goal of promoting and supporting businesses that can and want to make a difference through their work, producing with respect for the environment. It’s a mission—social rather than economic—to bring as many people as possible closer to the themes of sustainability, regeneration, and biodiversity.

Taverna dello scoiattolo

Glamorous, refined, exclusive, the Taverna dello Scoiattolo is a dream chalet nestled in the greenery at the top of Living Mountain, in a privileged area isolated from the other structures. The warmth of a lit fireplace on crisp winter days and the coolness of the shade of the surrounding chestnut groves on sunny summer afternoons make the Taverna the perfect location for our Retreats. At the Taverna dello Scoiattolo, you can listen to live musical performances, enjoy delicious vegetarian and vegan food prepared by our dedicated chefs, and share unique moments.

Locanda alla posta

Set in the lush greenery of the Living Mountain, Locanda Alla Posta proposes traditional Tuscan dishes that have been revisited by our skilled, creative chef. With a menu that focuses on the quality of the ingredients and local food & wine, the interior has been redesigned, bringing its elegant understatement to light. Two large terraces – one of which covered – with a view of the Apuan Alps.
